Gluten free flour can make cakes rather dry. This is something I have been working on for some time and my gluten free cakes are tasty and moist. In fact one gluten free customer told me I should sell my recipe because it was so good.
This week I am going to experiment with my recipe again because I think I have come up with the most perfect idea for gluten free that will give maximum flavour and be moist with a melt in the mouth texture. I can't wait to try it, just need to go out and buy the ingredients.
When the cake is made I will test it on my biggest critics: my teenage children. They always tell it as it is so I will know for sure if I am onto a winner or not.
