I have always enjoyed making mehndi cakes, the designs, patterns and colours are stunning.

Over the last few weeks I have been working on some new designs and here is the first of them. This is a dhol drum, a traditional instrument, popular at mehndis and weddings. I have made a few of these now and each one is more elaborate than the last.

To make this cake I baked a series of 9 inch and 8 inch round cakes, filled them, as usual, with buttercream and sliced a small piece off the side of each. Using buttercream to anchor one of the 9 inch cakes to the board I stood it up on the side I sliced the piece of cake from and covered it with more buttercream and repeated this with the 9 inch cakes and then the 8 inch cakes on either side. Once the the cakes were all sandwiched together I carved the top and sides to get a smooth finish and then covered the whole thing with more buttercream.

When the buttercream had hardened a little I covered the cake with orange icing and then decorated it with the gold, red and yellow as seen in the picture.

This cake will provide about 200 portions.
