This week I have made rainbow cupcakes, I haven't made them before and at first wasn't sure how to go about it. However after thinking about it for awhile I came up with the perfect solution.

Firstly I bought some white paper cupcake cases, the paper needs to be quite thin so the colours of the sponge show through. I used my usual vanilla cupcake ingredients and prepared it in the usual way then divided the mix into 3 separate bowls, adding a food colour to each. I used yellow, red and blue. Then piped a small amount of each colour into each cupcake case, filling them about three quarters full. they baked beautifully with all of the colours showing clearly through the cases and where the blue and yellow had mixed together the colour was green.

For the buttercream frosting I followed the same method with 3 bowls of different coloured buttercream. I used a large piping bag and loaded it with the three colours and piped as usual. The effect is really stunning. Once the piping bag is empty do not reuse it as the colours will smear and become less defined, use a fresh bag and then add a few sprinkles.

I have to say rainbow cupcakes are amazing.
